Sugared Pecans
1 cup granulated sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
6 tablespoons milk
1 teaspoon vanilla extract
3 cups pecans
In a 2-quart saucepan, combine sugar, salt, cinnamon and milk. Bring to a boil and cook to soft ball stage. Remove from heat and add vanilla extract. Add pecans. Stir until all pecans are coated and turn white and grainy. Spoon out onto wax paper.
When cool, break up any clusters of pecans. Keep in a well-sealed tin.
Yields 3 cups.

Taco Salad
1 pound ground chuck
1 cup Cheddar cheese, grated
1 head lettuce, torn into pieces
2 tomatoes, chopped
1 cup olives, chopped
1 onion, chopped
1 package tortilla chips
1 to 2 avocados
Brown and drain meat. Mix with all ingredients except avocado. Garnish with avocado. Serve with salsa of your choice.

Quesadillas
12 flour tortillas
3/4 pound Monterey jack cheese, shredded
1 tablespoon ground cumin
5 or 6 roasted green chiles, skins and
seeds removed, chopped, or
3 (4 ounce) cans chopped green chiles
3/4 cup pitted black olives, sliced
1 medium red onion, chopped
Sour cream, if desired
Lay out 6 tortillas, reserving 6. In medium bowl, combine remaining ingredients, and distribute evenly over each tortilla. Cover each with another tortilla.
Heat 1/4 cup vegetable oil in a large skillet over medium-high heat. Fry tortillas, one at a time, until bottom is crisp. With a wide pancake turner, turn, and fry other side until crisp. Remove from heat, and drain on paper towels. Cut into 8 wedges. Repeat with remaining quesadillas.
Serve with sour cream, if desired.
Makes 48 wedges.

Turkey Tacos
12 taco shells
1 1/3 pounds ground turkey
1 1/2 cups prepared salsa, or to taste
1/3 cup light sour cream
1/2 teaspoon ground cumin
4 ounces reduced-fat, sharp Cheddar cheese, grated (about 1 cup)
4 ounces leaf lettuce, shredded
1 tomato, chopped
1 avocado, peeled, seed removed and chopped
Preheat oven to 250 degrees F.
Place taco shells on cookie sheet and heat in oven for 10 to 15 minutes.
Meanwhile, coat large nonstick skillet with vegetable oil spray and brown turkey, breaking it into small pieces with spoon, over medium-high heat. Add 1 cup (or more, if desired) salsa, stir to combine, reduce heat and simmer for 5 minutes.
In small bowl, stir together sour cream and cumin; set aside.
Serve meat, taco shells, remaining salsa, cumin, sour cream and condiments separately at table, letting guests assemble their own tacos.
Makes 4 generous servings.

Egg Foo Yung
5 eggs
1/2 cup shredded scallions
1 cup bean sprouts, drained well if canned
Mix all together and fry in patties. Smother with Chinese Gravy.
Chinese Gravy
1 cup chicken broth
1 teaspoon sugar
1 teaspoon soy sauce
1/4 teaspoon MSG
1 tablespoon cornstarch, mixed with a little water
Salt
Pepper
Cook over low heat until thick.
Serve over Egg Foo Yung.

Coffee Cake
2 cups brown sugar, firmly packed
2 cups all-purpose flour
3/4 cup melted margarine
Mix together and reserve 1 cup for topping.
1 egg
1 teaspoon vanilla extract
1 cup hot coffee
1 teaspoon baking soda
Add to the above mixture and mix by hand. Pour into a 9 x 13-inch pan. Sprinkle on reserved cup of topping. Bake at 350 degrees F for 30 minutes.

Cheese Biscuits
1/2 pound sharp Cheddar cheese, grated
1/2 pound butter, softened
2 cups flour
Paprika
Confectioners sugar
Almond slivers
Mix cheese and butter; mash, then cream thoroughly. Add flour to mixture and mix well. Add paprika for color. Shape into logs and chill.
Slice thin and place on a lightly greased cookie sheet. Sprinkle with confectioners sugar and press almond slivers into center. Bake at 375 degrees F for 8 minutes. May be prepared in advance.
Yields 5 dozen.
